Ingredients:-
For Marination:-
500 gms. Mutton meat on bone
1 tbsp. Lemon Juice
Salt to taste
1 tsp. Garam Masala Powder

For Tempering:-
5 tbsp. Ghee
2 Bay Leaves
2-inch stick Cinnamon
2 Black Cardamoms
4 Green Cardamoms

For Paste:-
1 cup Plain Yogurt
1 tsp. Asafoetida
3 tbsp. Kashmiri Chilli Powder
2 tbsp. Ginger powder
1 tbsp. Fennel powder

Water as required


Method:-
- In a bowl marinate the mutton by adding salt and lemon juice for 30 minutes.
- Heat a pan and melt ghee in it.
- Add bay leaf, black cardamom, cinnamon, green cardamom and the marinated mutton.
- Sear the meat until golden brown in colour.
- In another bowl mix the paste ingredients together with a whisk.
- Add this mixture to the seared mutton and mix thoroughly.
- Sear on high flame for 2-3 minutes.
- Add water and cover with a lid. Cook for 45 minutes on medium flame or pressure cook for 4 whistles.
- Turn off the flame and cover with a lid for 10 minutes.


Mutton Rogan Josh is ready to eat!
